Te Quiero Tilapia (I Love You Tilapia)

I had a lot of fun with this recipe! I have taken also taken photos of each step to guide you through the cooking process! Happy Dining!

Here's what you need!
*Disclaimer* I reduced the amount of tomatoes to ONE after realizing that two would overwhelm the taste

4 Filets of Tilapia
2 Lemons
1 Lime
1/4 cup of Basil Tomato Feta Cheese
2 tsp. Salt
2 Lemons
1 clove of Elephant Garlic
5 stalk or Cilantro
1/2 cup Chardonnay
Pam Spray

Take one clove of Elephant Garlic

Slice off each end and peel off the outer dry layers
Slice into thin layers
Then dice into small pieces
Coat the bottom of your pan with Pam! Doesn't matter which kind!
Set the temp to a low degree and leave to brown the garlic
Sautee the garlic until brown. This usually takes about 10 minutes.

Select and wash you two lemons
Slice in half
Squeeze into the pan then remove the seeds

Leave on the same heat for another 10 minutes
While this is cooking, select the ripest Lime and slice into quarters. Put to the side on a plate.

Take you cilantro bunch and make sure that none of it is browned

Prick off the green leaves
Place in pan along with white wine for 10 minutes.
Select a juicy and ripe tomato

Slice into quarters and set to the side
Get out your Basil tomato Feta Cheese

Cut off a corner of the square to create 1/4 cup of Feta Cheese, crumble it, and put to the side.
Place your 4 filets of Tilapia in the pan

Place one slice of lime per filet on top
Place one slice of tomato on top
Cover and let cook
Turn up the heat slightly for 10 minutes
Sprinkle Feta Cheese on top and cover until melted

Place on plate along with vegetables of your liking and enjoy!

Introduction

Over time I have come to love the Ketogenic Diet not only because the results are so expeditious, but also because my physical well-being has improved drastically. For the past 15 years I have tried every fad diet, pill, eating disorder, and supplement to no avail. I had no idea that I had PCOS for so long and that my answer was SO SIMPLE! Low carbohydrate intake, moderate protein, and high fat consumption. Sounds backwards, right? Believe me, for the first few weeks I braced myself for the biggest weight gain of my life, however... the scale budged the other direction. As I stood there in confusion at this result I tried to mentally process why this worked. So, I'll try to explain it in a nutshell to the best of my ability.

Your liver is an amazing organ. It filters, helps your blood clot and breaks down old cells. It also produces ketones. Ketones shift your body from using carbohydrates that are immediately available in your bloodstream to burning fat, which is stored. This is wonderful for those who have Insulin Resistance because eating carbohydrates make us crave more carbohydrates. You know how they say "If you eat Chinese food you'll just be hungry 30 minutes later"? Think about all that rice they use. I'm not saying that some days I wouldn't kill for some sushi, but I have a much more satisfying goal in mind instead of filling up at Mori's! Don't get hungry just yet, friends! I have some amazing recipes that will keep you much more satisfied AND help you burn fat like a pro!

My Fridge

I have a big rule for myself: No refined sugars in the house. You can ransack my entire home and you won't find any junk food. Why? That's like an alcoholic keeping liquor in the house "just for treats". Not gonna happen that way! If you look inside my fridge you will find nothing packaged with preservatives of any kind, nothing produced with the help of hormone shots (non-organic meats, milks, etc.) and nothing containing refined sugar. I have a Must Have grocery list that always keeps my fridge stocked with what I need to create delicious recipes that will give me energy, hormonal balance, and a clean bloodstream.

In my Fridge:

  • Romaine Lettuce
  • Fresh Spinach
  • 80% Fat Ground Beef
  • Tilapia
  • Boneless Skinless Chicken Breasts
  • LOTS of Ranch dressing
  • Hummus
  • Salted Butter
  • Green Beans
  • Sliced Mushrooms
  • Vidalia Onions
  • Organic Milk (I rarely drink milk, but sometimes a glass before bed is nice)
  • Sharp Cheddar Cheese
  • Cottage Cheese
  • Feta Cheese
  • Unsweetened Greek Yogurt (I add a bit of honey in mine, but I ALWAYS measure it out)
  • Fresh Lemons
  • Tomatoes
  • Kalamata Olives
  • LOTS of bacon!
  • White Wine (I don't actually drink it because sulfites give me migraines, but I use it in my recipes)
  • Vanilla Vodka (That one IS for me on a relaxed Friday night!)

On my spice rack:
  • Fresh Oregano
  • Creole Blend
  • Italian Seasoning
  • Salt (go all out when using salt because your body will be flushing a lot of it out on this diet)
  • Pepper
  • Red Wine Vinegar
  • Cumin
  • Dill Weed
  • Cayenne Pepper
  • Paprika
  • Honey (use sparingly)
  • Extra Virgin Olive Oil
I drink a gallon of distilled water a day simply because on the Ketogenic Diet your kidneys are working extra hard to filter your bloodstream and need to have plenty of water to flush out the fat, toxins, and other fun stuff you'll be dumping. I also LOVE Green Tea with lemon. You will hear a lot of people advocate using sweeteners on this diet, however that is actually more risky than most people know. Aspartame poisoning is very real, imitates Multiple Sclerosis and is irreversible. Also, sweeteners trick your brain into thinking it's about to process calories that are not there and WORSENS insulin sensitivity.

Now, some of you who know me know that I have a "Suck it up" mentality when it comes to complaints such as "Water is boring" or "I can't go out to eat anywhere, now". Which do you want more? How badly do you really want this? In fact, take a dry erase marker and write that at the top of your mirror if it helps you get into Beast Mode every day! You're worth being the healthiest you possible.
